Tag Simple Roasted Veggies

Ingredients

1 head cauliflower, roughly chopped

1 bunch carrots (not baby), roughly chopped

1 small bag red skin potatoes, roughly chopped

1 pint cherry tomatoes, whole

1 butternut squash, cubed 

salt & pepper to taste

Italian Seasoning

olive oil

Directions

1. Preheat oven to 400F.

2. Wash, chop and prepare vegetables as instructed. 

3. Place vegetables on large baking sheet, drizzle lightly with olive oil, and season to taste. 

4. Mix vegetables around tray until coated evenly. Bake at 400F for 50 minutes, stirring roughly every 20 minutes to prevent burning.

We love this recipe because there are no exact measurements needed. The idea is to load your favorite veggies onto a tray, season to taste, and roast in the oven! It's healthy, delicious and nutricious!
