1 head cauliflower, roughly chopped
1 bunch carrots (not baby), roughly chopped
1 small bag red skin potatoes, roughly chopped
1 pint cherry tomatoes, whole
1 butternut squash, cubed
salt & pepper to taste
1. Preheat oven to 400F.
2. Wash, chop and prepare vegetables as instructed.
3. Place vegetables on large baking sheet, drizzle lightly with olive oil, and season to taste.
4. Mix vegetables around tray until coated evenly. Bake at 400F for 50 minutes, stirring roughly every 20 minutes to prevent burning.
