1 cup pumpkin puree
1/2 cup almond milk (any dairy free milk will work)
3/4 cup real maple syrup
1 tbsp. real vanilla extract
2.5 cups rolled oats
1.5 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup dark chocolate chips
1. Preheat oven to 350F. Place muffin liners in muffin pan. Spray with cooking oil of choice.
2. Place listed ingredients (except chocolate chips) in high speed blender or food processor (we use Vitamix).
3. Place muffin mixture in mixing bowl. Combine chocolate chips. Evenly scoop mixture into muffin cups.
4. Bake muffins for 20-25 minutes. Allow muffins to cool for about 15 minutes before serving.
